Awesome!

Just remember if you have veggies and pasta that the veggies should take up the most space in your pasta meal!

A serving size of pasta alone (ie not with anything else on it) is approximately 1-1/2 cups cooked -- NOT 3-5 servings piled on a giant plate like you get at your favorite restaurant chain! Pasta is so cheap, which is why restaurants like to fill your plate with it. But you don't have to!

Here are some recipes I make all the time that use some of the World’s Healthiest Foods.

Broccoli Salad: Steam fresh broccoli for 2-3 minutes (keep crisp). Drain immediately and cool. Mix with chopped apples, red onions, feta cheese (on list but not real low-fat!), dried cranberries, walnuts, fresh garlic (not powdered!). Pour on a little olive oil and lemon juice.

Lettuceless Salad: Any fresh veggies on the list, lightly steamed so still crisp, a little brown rice, chopped onions (red, white, or green), olive oil and lemon juice. Add spices as desired. No lettuce needed.:-)

Zucchini Ribbons: Slice off ends of zucchini (called “summer squash” on the list). Stand upright on cutting board and use peeler to slice long ribbons. Sauté quickly in little olive oil. Add shredded carrots and sauté. Remove from heat and add feta cheese and dried cranberries. Makes great faux pasta; you can serve anything on top of it. Just don’t overcook them.

Black Bean Salsa: Toss together 2 cans drained black beans, drained fresh salsa (with tomatoes, peppers, onions, etc.), avocado, cilantro, green onion, cumin, fresh garlic, little olive oil and lemon juice.

Roasted Veggies: I love slicing veggies and roasting in the oven. Slice, place on cookie sheet with low sides (ie not in a baking pan) and pour on a little olive oil. Don’t load too many veggies in the pan since they need air around them or they get soggy. Add cloves of fresh garlic, sprigs of rosemary, and sliced onions. Roast at 450 degrees about 10 minutes and your kitchen will smell like Tuscany.

My Pre-Funiq Breakfast: 1 cup non-fat yogurt (100 calories/cup, 0 fat), scoop of low-fat apple granola (from bulk section at Publix or Whole Foods); fresh fruit like strawberries, blueberries, peaches, pears. The only yogurt I use is Dannon All-Natural Non-fat Plain Yogurt. It has 2 ingredients: non-fat milk and pectin. Most yogurt has MSG in it (listed/disguised as “modified food starch”).

Fresh Italian Pasta Sauce: In large bowl place chopped very fresh tomatoes, smashed garlic, shredded fresh basil leaves. Boil angel-hair pasta, drain slightly and immediately pour on top of tomato mixture; this will slightly cook the tomatoes. Add olive oil and good Italian grating cheese (ie not Kraft!). You can add slices of broiled or sauted chicken.
